With a straight sewer line, when the water goes down, the smelly, toxic gas pours all the way back into the room unimpeded.

With a horizontal "S" bend, some water will remain in the bend as shown in the picture after the dirt is washed away by the current. The water acts as a tightly sealed "soft plug" that traps unwanted gases behind it and prevents them from flowing back down the drain. This is where the sewer bend works best.
